CHEF Steve Sowerby has swapped the refined atmosphere of the Royal Shakespeare Company for the huff and puff of a Sunderland health club.
The 43-year-old former catering manager for the RSC at Stratford has been appointed head chef at Springs, the SpringHealth Leisure health and leisure club.
He is an ex-Army man who has served in several parts of the globe during his 12 years with the Army catering corps and has extensive knowledge and experience of catering in all its guises.
His culinary expertise has also seen Steve become an NVQ assessor for the industry.
After his Army service finished, which included nine years in Germany plus spells with the United Nations in Cyprus, Portugal and Denmark, Steve was chef at a Warwickshire restaurant.
He then moved to the Swan, a function house in Billingham, near Stockton, where he stayed for nearly four years.
Having moved house from Billingham to Hastings Hill in Sunderland, he now plans to realise a long-standing ambition to take up golf
