A COUPLE are celebrating after winning £700 of holiday vouchers in a Northern Echo competition.
Mark and Doreen Blacklock, who live in South Shields, won the prize in the Echo's Florida Citrus competition.
Readers were asked to write in with a recipe which used Florida fruit juice and Mrs Blacklock chose baked pork chops with grapefruit sauce.
She said: "We're absolutely thrilled we won, but at the moment, we're still deciding where we would like to go.
"My husband visited the Everglades a couple of years ago and this was something he came back and told me about."
She said of the winning recipe: "We just made it up at home, using what we thought were the right ingredients and it seems to work quite well. It's very fruity, very tasty."
To make the Blacklocks' baked pork chops with grapefruit sauce, which serves four, you need:
Four pork chops
Salt, pepper
2 tbsp oil
half cup finely diced celery
6fl oz Florida grapefruit juice
One and a half cups bread
cubes
half onion, finely diced
three quarters tsp salt
half tsp tabasco sauce
one third tsp brown sugar
Sprinkle chops with salt and pepper. Brown in oil until golden both sides. Remove chops and place in casserole dish. Combine celery and grapefruit juice in frying pan with remainder of oil from chops and fry for two minutes.
Add bread cubes, onion, salt and tabasco and mix thoroughly.
Combine remaining grapefruit juice and brown sugar. Pour over chops in casserole. Arrange on top of pork chops. Cover and bake in oven heated to 350f for 30 minutes. Remove cover and bake for another 15 minutes or until chops are tender.
