AN ORGANIC cheese has proved so popular that extra staff have been taken on.
The Swaledale Cheese Company in Richmond introduced the cheese earlier this year, using organic milk supplied by Hazel Brow Farm, Low Row, but its popularity took David Reed, partner in the company, by surprise.
Now, to keep up with demand, he has taken on two extra staff to ensure orders are met.
Mr Reed believes part of its popularity is down to the fact that it is completely "Yorkshire".
Hazel Brow Farm, which grazes its dairy herd on the flower-rich meadows and wild heather moorlands bordering the River Swale, has built a strong reputation for its own organic products.
The Swaledale Organic is the thirteenth cheese in the Swaledale Cheese Company's line up of hand-crafted cheeses, and is offered in a 2.5kg natural rind as well as the 227g hand-waxed option.
Like all the others, it is made from a secret recipe said to have been brought to the Yorkshire Dales from Normandy by Cistercian monks during the eleventh century.
