THE heat will be turned up when a North-East curry chef bids for the national title of Curry Chef of the Year.
Mohammed Sultan's will compete against defending champion Chad Rhaman and six other regional finalists in tomorrow's final, which will be held at the Good Food Show at Birmingham's National Exhibition Centre.
Mr Sultan, who is head chef at the Massala Restaurant, in Middlesbrough, won the North-East regional title with a roast breast of chicken stuffed with herbs, spices and king prawn pate, complete with a side dish of spiced mixed vegetables and basmati rise, cooked with a julienne of carrot, cashew nuts and sultanas.
Tomorrow, he will have one hour to prepare and serve a curry, a side dish and a bread or rice dish. Marks will be awarded on taste, texture, aroma and appearance.
He is travelling to Birmingham with the good wishes of the town.
Councillor Barry Coppinger, Middlesbrough Council cabinet member for public protection, said good quality restaurants were an important feature in revitalising a town.
Chrissie Dunn, Food Standards Agency board member and national final judge, said: "This competition is an ideal opportunity for chefs to display not only their culinary skills, but also a high level of food hygiene awareness.
"The quality and taste of the food is crucial, but what really makes an excellent chef is someone who cooks high quality, tasty dishes while always following good food hygiene practice.''
