CHEFS from some of London's finest restaurants visited the region this week to sample game from a top wholesaler.
Yorkshire Game supplies game bird, wildfowl and venison to 50 London eateries, including The Ivy and Smiths of Smithfield, where Madonna recently celebrated her 40th birthday. The six chefs were given a tour of the company's factory at Brompton-on-Swale, in North Yorkshire, before being taken to a grouse moor on the nearby Raby estate.
Yorkshire Game sources its meat from throughout the North-East and Scotland and processes about 3,000 pheasants and up to 50 deer a day at the height of the season.
Chef Ashley Shergold, of Smiths of Smithfield, where a grouse dish costs about £22, said : "Our customers are interested in where the birds come from so it's very useful for us to visit here and to see the environment for ourselves."
