THE OWNERS of an “Italian food with a twist” business venture will open their new food stall in Darlington Indoor Market. 

Dough – which offers pizzas, pasta and charcuterie - is being lined up by Market Asset Management (MAM), which leases the building from Darlington Council, to operate out of the facility from next month, The Northern Echo can reveal. 

It is the brainchild of owners and directors Aarron and Mitchell Walbourne whose SALT - Street Food Kitchen and Bar, which opened on Grange Road two years ago, has taken Darlington by storm with its burgers, bao buns, burritos.

A delighted Aarron said: “We launched SALT two years ago and it is really thriving, but we don’t want to rest on our laurels, the time is right to diversify and to launch Dough at Darlington Indoor Market is an exciting prospect.

“The indoor market location is perfect for us and will allow us to offer lunchtime trade too, something SALT does not really do, it is a market with so much history and character and it’s a privilege that we can complement the multicultural food in one space.

“We are Darlington boys and to be able to bring something that boosts not only the food scene but benefits the area as a whole fills us with lots of pride."

The new venture will create around 10 new jobs ranging from chefs to front of house.

It is hoped Dough could begin trading in the market in February and the announcement comes amid exciting times for the indoor facility with work underway on its next phases of development.

A MAM spokesperson said: “We are excited to welcome such passionate and highly regarded traders who share our vision to make Darlington Market a destination venue for locals and the wider region.

“When Dough was launched on its social channels it hit 2k followers overnight. This is a brand-new concept that will be launching its physical presence in the market hall, and we are excited to work with local people who share our vision and have already contributed so much to Darlington.

“The amazing food reflects the quality, localism and high standards that the market hall is based on.”

Indoor Market redevelopment 

Shop fronts and units are being given a revamp with facelifts to both the Clock Tower and Central entrances, with new doors, better lighting and heat curtains.

A new Temperate Garden is set to open in phase three as part of a makeover of the East Row elevation as part of its third and final phase of redevelopment.

The temperate garden with a huge open-air feel – will also include the redevelopment of large sections of the Market Vaults.
